This creamy Instant Bircher Muesli is so easy to put together. The oats are finely milled in the Thermomix so that they absorb the milk quicker instead of soaking them overnight.
I love bircher muesli or overnight oats but am rarely organised enough to prepare them the night before so love making this instant version instead. The oats are blitzed for a few seconds in the Thermomix and I’ve also added some finely chopped apple as well.
I’ve made this with traditional rolled oats but if you don’t own a Thermomix or food processor then use quick oats. I love it served with coconut yogurt, blueberry compote, buckinis, goji berries, almond butter, fresh berries and a drizzle of maple syrup.
Instant Bircher Muesli
- 50 g rolled oats
- 1 apple, cored
- half a cup of milk, I use almond
- 1 tablespoon yogurt
- chia seeds
- goji berries
- almond butter
- blueberry compote
- fresh berries
- seeds such as pumpkin, sunflower, flaxseeds
- toasted coconut flakes
Weigh the oats into the TM bowl and Turbo Pulse 2-3 times.
Put them aside in a serving bowl and add the milk and yogurt and give a good stir to mix it all up.
Put the cored apple into the TM bowl and chop 2 sec/speed 5. Add it to the oat mix and give it another good stir.
Let it sit for a couple of minutes before adding your favourite toppings.
