Unsalted butter, fridge-cold and roughly chopped into cubes
Instructions
Add the sugar to the Thermomix bowl and mix for 10 sec/speed 9. Let the sugar settle for a few seconds before taking the lid off. Scrape down the sides of the Thermomix bowl with a spatula.
Add the chilled butter and soften it in the Thermomix for 15 sec/speed 8 until creamy. Note: If the butter is already at room temperature, skip to step 3.
Insert the Butterfly whisk. Beat the butter and sugar for 2 min/speed 3. Scrape down the sides of the bowl and beat again for 1 min/speed 3 until creamy.
Proceed with your recipe.
Notes
If you have time to soften the butter at room temperature, remove it from the fridge and let it sit on the bench top for approximately 30 to 60 minutes. To check it's softened, poke it with your finger or a knife. If it leaves a little indent, your butter is ready.
