Preheat the oven to 170°C/340°F (150°C fan) and line a large baking tray with baking paper.
Melt the coconut oil in the Thermomix bowl for 2½ min/50°C/speed 1. Add the maple syrup, vanilla extract, and cinnamon and mix for 3 sec/speed 5.
Add the oats, pumpkin seeds, and sunflower seeds. Mix for 20 sec/reverse/speed 3 until well combined. Scrape down the sides of the bowl, then stir well with a spatula to ensure everything is evenly coated.
Spread the mixture evenly over the prepared baking tray. Bake for 30 minutes, stirring halfway through.
Remove from the oven and stir through the sultanas. Leave the granola on the tray to cool completely. Once cooled, store in an airtight container at room temperature for up to four weeks.
