2large granny smith apples, or 3 medium sized ones, peeled, cored and cut into thin slices
1teaspoonmixed spice, or cinnamon
1tablespoonof brown sugar
15gchilled butter, cut up into small cubes
1egg, lightly beaten for egg wash
Instructions
To make the Sweet Shortcrust Pastry: Place the flour, butter, icing sugar and salt in the Thermomix bowl and mix for 10 sec/speed 6.
Add the chilled water and knead for 1 min/dough setting. The pastry should now have come together into clumps; if not, knead for a few seconds more.
Turn the pastry onto a lightly floured surface and gently knead it into a ball. Wrap in cling film or glad wrap and refrigerate for 30 minutes while you prepare the apple filling.
Preheat oven to 190°C/375°F (170°C fan)and line a large baking tray with baking paper.
For the Apple Filling: Peel and core the apples and cut them into thin slices. Place them into a bowl, add the brown sugar and mixed spice and toss well to combine.
To Assemble: Take the pastry out of the fridge and roll it out onto a lightly floured surface into a circle shape that's roughly 30cm in diameter. It doesn't have to look perfect! Transfer the pastry carefully onto the prepared baking sheet.
Arrange the apple filling in a single layer over the pastry, leaving a 3-4cm border around the edges.
Gently fold the edges of the pastry dough over the apples, then pinch together with your fingers every 3-4cm. (See photo in recipe post).
Brush the crust edges with the egg wash, dot the apple filling with butter, and bake in the oven for 40 minutesuntil the crust is golden.
Serve warm with freshly whipped cream or vanilla ice cream ice cream.
Notes
Both the pastry and apple filling can be made ahead of time and stored in the fridge for up to a day.
