Ingredients
- 1 apple, peeled and cored, see notes
- 100 g raspberries, frozen or fresh
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1-2 teaspoons maple syrup, adjust to taste
Instructions
- Peel and core the apple, then roughly cut it into 1cm cubes.
- Add the apple to the Thermomix bowl along with the raspberries, cinnamon, and lemon juice.
- Cook for 12 min/80°C/reverse/speed 1 with the measuring cup off, until the apple is tender. Place the simmering basket or splatter guard on top of the lid to prevent splattering.
- Add the maple syrup to taste and serve while still hot.
Notes
- Granny Smith apples are ideal as they hold their shape and don't go mushy.
- Maple syrup can be substituted for honey or rice malt syrup.
- For a smoother, jam-like texture, blend the compote briefly at the end of cooking.
- This recipe can easily be doubled with the same cooking time.
- Storage: Store any leftover compote in an airtight container in the fridge for up to 3 days. It's delicious cold or can be reheated on the stove or in the microwave.
