Peel and core the apple, then roughly cut it into 1cm cubes.
Add the apple to the Thermomix bowl along with the raspberries, cinnamon, and lemon juice.
Cook for 12 min/80°C/reverse/speed 1 with the measuring cup off, until the apple is tender. Place the simmering basket or splatter guard on top of the lid to prevent splattering.
Add the maple syrup to taste and serve while still hot.
Notes
Granny Smith apples are ideal as they hold their shape and don't go mushy.
Maple syrup can be substituted for honey or rice malt syrup.
For a smoother, jam-like texture, blend the compote briefly at the end of cooking.
This recipe can easily be doubled with the same cooking time.
Storage: Store any leftover compote in an airtight container in the fridge for up to 3 days. It's delicious cold or can be reheated on the stove or in the microwave.
