Instructions
Line a 12-hole muffin tin with cupcake cases.
Add the chocolate melts to the Thermomix bowl. Grate for 10 sec/speed 9.
Scrape down the bowl and melt the chocolate for 2 min/50℃/speed 2 with the measuring cup off. Scrape down the sides of the bowl with a spatula and melt again for 2 min/50℃/speed 2 until the chocolate is fully melted (with the measuring cup off).
Add the shredded coconut to the Thermomix bowl and mix for 20 sec/reverse/speed 2 until the coconut is fully coated in chocolate.
To create the nests, spoon a tablespoon of the mixture into each case and press down in the middle with your thumb or the back of a teaspoon to create a space for the eggs to sit.
Quickly insert 3 eggs into each nest, so they stick while the chocolate is still warm, then transfer them to the fridge to set for 20 minutes.
Notes
Storage: If you live in a warmer climate, it's best to store the nests in the fridge. Allow them to sit at room temperature for about 10 minutes to soften before serving. They will last for a week in the fridge.
