Instructions
Place the onion and garlic into the Thermomix bowl and chop for 5 sec/speed 5. Scrape down the bowl, add the olive oil, and saute for 3 min/100℃/speed 1 with the measuring cup off.
Add the potato and chop for 4 sec/speed 5. Scrape down the sides of the mixing bowl.
Add the frozen peas and vegetable stock and cook for 15 min/100℃/speed 1 with the measuring cup on. When finished, check that the potato is soft. If not, cook again for a few more minutes.
Add the fresh mint leaves and blend for 90 sec/speed 8, increasing the speed gradually. Check the consistency - if needed, add a little water and blend again. Season to taste, adding more mint if desired.
Serve immediately, garnished with fresh mint leaves.
Notes
Storage: Store any leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat gently until warmed through.
