Add the peanuts to the Thermomix bowl and mix for 1 min/speed 9. Scrape down the sides of the mixing bowl with a spatula.
Mix for 2 min/speed 5. Scrape down the sides of the bowl and mix again for 1 min/speed 5 until smooth and creamy.
Transfer to a jar or container and cool before sealing the lid. Store the peanut butter in the fridge for 2-3 months.
For Crunchy Peanut Butter: Weigh 50g of the peanuts in the Thermomix bowl and pulse until they are broken into tiny pieces. Transfer them to a bowl and set aside. Make the peanut butter as above, then add the peanut pieces at the end and mix for 3 seconds/reverse/speed 3 until combined.
Notes
1. Use dry roasted peanuts. You can easily buy prepared dry-roasted peanuts in the supermarket. They are usually lightly salted, which contributes to the flavour. To roast your own peanuts, preheat the oven to 180°C and spread the nuts in a layer on a baking tray. Roast for 10-20 minutes until well browned. Allow to cool completely before continuing with the recipe. This recipe also works with peanuts with their skin on.
