Preheat the oven to 200°C/400°F (180°C fan)and line a 12-hole muffin tin with cupcake cases.
Add all the ingredients to the Thermomix bowl and mix for 10 sec/speed 5. Scrape down the bowl and mix again for 10 sec/speed 5 until the batter is smooth.
Spoon the batter evenly into each cupcake case, filling each one about two-thirds full. Bake for 15-20 minutes, or until golden and a toothpick inserted into the centre comes out clean.
Leave to cool in the tin for a few minutes, then transfer the cupcakes to a wire rack to cool completely.
Notes
StorageStore the cupcakes in the pantry for 2-3 days in an airtight container. Store in the freezer for up to 3 months. Thaw in the refrigerator overnight.
