Thermomix Vanilla Cupcakes
A soft and fluffy Vanilla Cupcake recipe made in the Thermomix.

Ingredients
- 190 g unsalted butter, roughly cubed
- 190 g caster sugar
- 190 g self raising flour, sifted
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
- 60 g milk
Instructions
- Preheat the oven to 180°C/350°F (160°C fan) and line a 12-hole muffin tin with cupcake cases.
- Add the butter to the Thermomix bowl and mix for 40 sec/speed 4 to soften it.
- Add the remaining ingredients and mix for 10 sec/speed 5. Scrape down the bowl and mix again for 10 sec/speed 5 until the batter is smooth.
- Spoon the batter evenly into each cupcake case, filling each one about two-thirds full.
- Bake for 15-20 minutes, or until golden and a toothpick inserted into the centre comes out clean. Leave to cool in the tin for a few minutes, then transfer the cupcakes to a wire rack to cool completely.
Notes
Storage: Store the cupcakes in the pantry for 2-3 days in an airtight container. Store in the freezer for up to 3 months. Thaw in the refrigerator overnight.
