Unsalted butter - unsalted butter gives you complete control of the overall flavour of your recipe, as the salt content in different butter brands can vary greatly.
Caster sugar - you can make caster sugar in the Thermomix from regular white sugar.
Self-raising flour -
Eggs - use large eggs at room temperature.
Vanilla extract - use vanilla extract or pure vanilla bean paste. Avoid using vanilla essence, as it's less intense.
Milk - either full cream or lite milk.

Step by Step Directions

Add all the ingredients to the Thermomix bowl.

Mix for 20 seconds until smooth and creamy, scraping the bowl halfway through.

Thermomix Vanilla Cupcakes
A soft and fluffy Vanilla Cupcake recipe made in the Thermomix.
Ingredients
- 190 g unsalted butter, room temperature
- 190 g caster sugar
- 190 g self raising flour, sifted
- 3 large eggs, room temperature
- 1½ teaspoons vanilla extract
- 1½ tablespoons milk
Instructions
- Preheat the oven to 180°C fan / 200°C and line a 12-hole muffin tin with cupcake cases.
- Add all the ingredients to the Thermomix bowl and mix for 10 sec/speed 5. Scrape down the bowl and mix again for 10 sec/speed 5 until lovely and smooth.
- Spoon the mixture evenly to ⅔ way up in each cupcake case and bake in the oven for 15-20 minutes until golden brown and a toothpick inserted in the middle comes out clean.
- Leave to cool for a few minutes, then transfer the cupcakes to a baking rack to cool completely.
