Ingredients

brown onions

peeled and halved

carrots

roughly chopped

celery stalks

roughly chopped

leek

roughly chopped

sprigs of thyme

leaves only

sprigs of flat leaf parsley

olive oil

teaspoon
sea salt

teaspoon
black pepper
Instructions
Place all the vegetables and herbs into the mixing bowl and chop for
10 sec/speed 6.
Scrape down the sides of the mixing bowl with a spatula.
Add the olive oil, salt and pepper then cook for
15-20 min/Varoma/speed 1,
with the simmering basket on top instead of the measuring cup.
Once cooked, blend for
30 sec/speed 9
, gradually increasing the speed until smooth.
Freeze in ice cube trays or store in an airtight container in the fridge for up to a week.
Notes
Storage
: Store the stock paste in the fridge for up to a week. Store in ice cube trays in the freezer for up to 3 months.
