Pour the vodka, Kahlua, and freshly brewed hot espresso into the Thermomix bowl. Add the ice and mix for 30 sec/reverse/speed 4.
Insert the simmering basket into the Thermomix bowl and strain the espresso martini evenly into two martini glasses. The foam settles at the end of pouring, so for the best frothy top, pour each glass halfway first, then top up with the remaining espresso martini.
Garnish with three coffee beans, if you like.
Notes
Fresh, hot espresso is the key to creating a lovely foamy top and won't significantly melt the ice.
Decaf espresso works just as well in this recipe and gives the same great results, minus the caffeine hit.
This recipe makes two glasses but can easily be doubled to serve four. There's no need to double the ice.
If you don’t have Kahlua, you can substitute another coffee liqueur. Just keep in mind it may taste less sweet, so you can add a small amount of sugar syrup to taste if needed.
Chilling the martini glasses before serving helps keep the drink colder for longer.
