- White chocolate - use white chocolate melts from the baking aisle for the most reliable results. These are designed to be melted and will not go grainy. An exception is Lindt white chocolate, which melts very well.
- Marshmallows - large marshmallows cut in half are just the right size to ensure a gooey mouthful in every bite.
- Glacé cherries - bright red, sticky, and very Christmasy. See substitutions below.
- Pistachios - no need to chop them up beforehand, except for a few for the topping. See substitutions below.
- Vegetable oil - choose a neutral flavour oil like sunflower or canola. The addition of vegetable oil helps keep the white chocolate smooth and makes the rocky road easier to cut once set.
Substitutions
Glacé cherries - can be substituted for dried cranberries or dried cherries. If you're in Australia, you could also use Allen's Ripe Raspberry lollies.
Pistachios - you can use other nuts such as almonds, cashews, hazelnuts, peanuts, macadamia nuts, or pecans.
Step-by-Step Directions

- Line a baking tin, with overhangs on opposite sides to make it easy to lift the rocky road out. Have pistachios, marshmallows and glacé cherries weighed and ready to add. Reserve about 10 cherries and a tablespoon of pistachios for the rocky road topping. Roughly chop the reserved pistachios into small pieces so they scatter neatly over the surface.

- Add the white chocolate to the Thermomix bowl and melt for 3 minutes, on 50°C, speed 1. Scrape down the bowl, then melt for a further 2 minutes, 50°C, speed 2.

- Work quickly and add the mix-ins, then gently mix for 10 seconds on reverse speed 2.

- Give the mixture a good stir with a spatula to ensure everything is evenly coated with white chocolate.

- Quickly tip the mixture into the prepared tin before it starts to set. Press down and smooth over the top.

- Scatter over the reserved cherries and pistachios and gently press them into the surface. Refrigerate for 3 hours, or until set.
Rocky Road Tips
- Use the right melting chocolate from the baking aisle.
- Keep the temperature at 50°C when melting the white chocolate.
- Leave the measuring cup off while melting the chocolate to prevent condensation dripping in and causing it to seize.
- Work quickly when adding the mix-ins, as they bring the temperature of the chocolate down and it begins to set.
- For extra crunch, toast the pistachios in a frying pan over low heat.
- Leave overhangs when lining the tin to make it easier to lift the rocky road out once set.

Storage
Store the rocky road in an airtight container in the fridge for 1-2 weeks.
Common Questions
No, doubling the recipe isn't recommended, as the Thermomix bowl isn't large enough to melt and mix the chocolate evenly.
This can happen if the wrong type of white chocolate is used. Use white chocolate melts and not cooking chocolate.
Over-chilling can make the rocky road firm. Let it sit at room temperature for 5-10 minutes before slicing.

Thermomix White Chocolate Rocky Road
Ingredients
- 500 g white chocolate melts, see notes
- 20 g vegetable oil
- 80 g pistachios
- 160 g glacé cherries
- 100 g marshmallows, cut in half
Instructions
- Line a 20cm square tin with baking paper, leaving overhangs at opposite sides to make lifting easier.
- Pre-weigh the pistachios, glacé cherries and marshmallows. Reserve about 10 glacé cherries and 1 tablespoon of pistachios for the topping. Roughly chop the reserved pistachios.
- Place the white chocolate into the Thermomix bowl and grate for 8 sec/speed 9. Scrape down the sides of the bowl with a spatula.
- Add the vegetable oil and melt for 3 min/50°C/speed 1 without the measuring cup. Scrape down the bowl, then melt for a further 2 min/50°C/speed 2 without the measuring cup.
- Add the pistachios, glacé cherries and marshmallows. Mix for 10 sec/reverse/speed 2. Use a spatula to give the mixture a good stir so everything is evenly coated with chocolate.
- Quickly transfer the mixture to the prepared tin and spread evenly. Scatter over the reserved cherries and pistachios. Refrigerate for 3 hours, or until set. Slice to serve.
