A healthy and delicious Thermomix Blueberry Compote which is ready in next to no time and any leftovers can be stored in the fridge for a few days.
This is my favourite compote which I mix into my morning porridge. The weather is still pretty cool down here in Melbourne and it’s so warming and comforting. I love making it in the Thermomix as there’s no stirring involved so you can get on with other things in the mad morning rush.
This Thermomix Blueberry Compote is also delicious drizzled over my Waffles, Fluffy Pancakes and Blueberry Banana Vegan Pancakes. This recipes serves one but you can always double the quantity and store it in the fridge for a few days.
- 1 teaspoon of lemon rind
- 100 g frozen blueberries
- 1 teaspoon maple syrup
- half a teaspoon cinnamon
Add all the ingredients to the Thermomix bowl and cook for 4 mins/100/reverse/speed 1 with the MC off.
Serve immediately and enjoy.
Any leftovers can be stored in an airtight container in the fridge for a few days.
