This Thermomix teriyaki sauce is ready in 25 minutes and made with just 5 ingredients: soy sauce, mirin, cooking sake, water and brown sugar. Use it for marinating chicken or salmon, drizzling over rice bowls or tossing through noodles.

Traditionally, teriyaki sauce doesn't contain brown sugar - the mirin takes care of the sweetness. I've added a small amount here to help thicken the sauce and give it that glossy, sticky finish.

- Mirin and cooking sake are both available at Coles and Woolworths in the Asian foods aisle.
- Tamari can be used in place of soy sauce.
Teriyaki Sauce Tips
- Leave the measuring cup off for the full 20 minutes. Steam needs to escape for the sauce to reduce properly. There's no need to place the simmering basket or splatter guard on top as the volume of liquid is small.
- The sauce will look thin when it comes out of the Thermomix but will thicken upon cooling.

Thermomix Teriyaki Sauce
A versatile homemade teriyaki sauce that works as a marinade, a glaze, or a sauce for rice bowls and noodles.

Servings: 100 ml
Ingredients
- 60 g soy sauce or tamari
- 60 g mirin see notes
- 60 g cooking sake see notes
- 60 g water
- 30 g brown sugar
Instructions
- Add all the ingredients to the Thermomix bowl. Mix for 3 sec/speed 4.
- Cook for 20 min/Varoma/speed 1, without the measuring cup. There's no need for the simmering basket or splatter guard, as the volume of liquid is small.
- Transfer to a heatproof jar or container and cool completely before using. The sauce thickens slightly as it cools, to the consistency of maple syrup.
Notes
Mirin and cooking sake: Both are sold in the Asian aisle at most major supermarkets.
Storage: Store the teriyaki sauce in an airtight jar or container in the fridge for up to 2 weeks. Give it a stir before using if it has been sitting for a few days.
