If you love a good Gin & Tonic, you'll love this zesty frozen version. It's simple to make in the Thermomix and requires only five ingredients: gin, tonic, lemon juice, sugar syrup, and egg white to make it smooth.

The flavour is sweet and tangy, with just enough gin, so it's not overpowering. It can be made ahead of time and stored in the freezer, and it will remain soft, so there's no need to take it out to thaw before serving.

  • Sugar syrup - see the recipe here to make sugar syrup in the Thermomix.
  • Gin - use any brand of gin!
  • Lemon juice and zest -
  • Tonic water -
  • 1 egg white - adding egg white gives the sorbet a smooth texture. Use a small egg white so that it doesn't affect the flavour.

How to make Thermomix Gin & Tonic Sorbet

  1. Start by making the sugar syrup. See the Thermomix recipe here. Once the sugar syrup is made, pour it into a large freezer-proof container (over 1 litre capacity, allowing room for expansion when frozen) and let it cool for half an hour at room temperature. Then, transfer it to the fridge to cool completely.

  1. Once it's cool, add the tonic water, lemon juice and gin and stir well to combine. Cover and freeze for 5-6 hours.

  1. After 5-6 hours, the sorbet will be frozen around the edges and slushie in the middle.

  1. Transfer it to the Thermomix bowl, add the egg white, and blend until it is lovely and smooth. Transfer back into the freezer to firm up before serving.

Serving Suggestions

I love this served alone with just a lemon wedge for garnish. Even though it contains a little gin, both my teenage daughters have enjoyed a small portion of this with no noticeable alcohol effect! (I probably wouldn't serve it to small children, though🥴!).

Thermomix Gin & Tonic Sorbet

If you're looking for a dessert to impress, our Thermomix Gin & Tonic Sorbet is refreshing, zesty, and super simple to make.

Ingredients

  • 250g water
  • 300g white sugar
  • 50ml gin
  • juice of half a lemon, plus zest for decorating
  • 500ml tonic water
  • 1 small egg white, note 1

Instructions

  1. Start making the sugar syrup: Add the water and sugar to the Thermomix bowl and heat for 5 mins/100°/speed 2 until the sugar dissolves.
  2. Pour the sugar syrup into a large freezer-proof container measuring over 1 litre. Cool down on the benchtop, then chill in the fridge for half an hour.
  3. Once the sugar syrup is chilled, add the gin, lemon juice, and tonic water and stir well. Cover and freeze for 5-6 hours until semi-frozen.
  4. Once the mixture is semi-frozen, place it in the Thermomix bowl with the egg white and blend for 30 sec/speed 9 until smooth.
  5. Pour the mixture back into the container, cover it, and freeze it for a couple of hours or more to firm it up.
  6. Decorate with strips of lemon or lime zest, and enjoy!

Notes

Note 1 - Egg White: Egg white is used to make the sorbet smooth. If possible use an egg white from a small egg so that it doesn't affect the flavour.

Storage

Store the sorbet in the freezer for up to 2 weeks.

    Hello I just got this thermomix, how can I half the sugar syrup? Or leave it out all together?

    Do I just put water then?
    Instead of the sugar syrup
