Recipe Ingredients

- Peanuts - use dry roasted unsalted peanuts - readily available at Coles and Woolworths. If you can only find raw peanuts, see the section below.
How to Roast Raw Peanuts (If Needed)
If you can only find raw peanuts, spread them on a lined baking tray and roast at 175°C for 10-15 minutes, stirring every 5 minutes, until golden and fragrant. Allow to cool until just warm before adding to the Thermomix bowl.
Step-by-Step Directions

Step 1
Add the peanuts to the Thermomix bowl.

Step 2
Mix for 1 minute at speed 9. Scrape down the sides of the bowl with a spatula.

Step 3
Mix for 2 minutes on speed 5. Scrape down the sides of the mixing bowl with a spatula then mix for a further 1 minute on speed 5.
To Make Crunchy Peanut Butter
Roughly chop 50g of the peanuts with a knife into small, even pieces and set aside. Make the peanut butter as per the recipe above. Once done, add the reserved peanut pieces and mix for 3 sec/reverse/speed 3 until combined.
Storage
Transfer the peanut butter to a jar or airtight container and allow to cool completely before sealing. Store in the fridge for up to 1 month - it will thicken when cold but will return to its normal consistency once it comes back to room temperature.

Thermomix Peanut Butter
Ingredients
- 500 g unsalted dry roasted peanuts note 1
- pinch of salt optional
Instructions
- Add the peanuts to the Thermomix bowl. Mix for 1 min/speed 9. Scrape down the sides of the bowl with a spatula.
- Mix for 2 min/speed 5. Scrape down the sides, then mix for a further 1 min/speed 5 until smooth and creamy. The peanut butter will be warm from the blades - this is normal. Taste and add a pinch of salt if desired.
