- Hazelnuts - we opt for hazelnuts with skin on them as they are cheaper and more readily available. I've included notes in the recipe on how to easily skin them yourself.
- Cocoa powder - use good-quality cocoa powder, either Dutch-processed for a deep, smooth flavour or unsweetened if that’s what you have available.
- Icing sugar - use store-bought, or you could make your own icing sugar in the Thermomix.
- Vegetable oil - use either sunflower or canola.
- Vanilla extract - use vanilla extract or pure vanilla bean paste.
Step by Step Directions

- Spread the hazelnuts out on the baking tray and bake in the oven for 8 minutes, turning halfway through.
- Transfer them to a large container that has a lid.
- Place the lid on and vigorously shake the container to release the skins. It's okay to leave a few skins on.
- Carefully transfer the hazelnuts to the Thermomix bowl, being careful not to transport too much of the loose skins (as they are bitter).
- Pulverise the hazelnuts for 15 seconds.
- Blend for 3 minutes on speed 4. Scrape down the bowl, then blend again for 2 minutes until runny. Blending on a lower speed prevents the hazelnuts from splattering all over the bowl.
- Add the remaining ingredients and a pinch of salt.
- Blend for 2 minutes on speed 4. Give the bowl a good scrape, then blend again for 2 minutes. It's now ready to pour into a jar and store.

Thermomix Nutella
A delicious chocolate hazelnut spread, perfect for toast, pancakes and more!
Ingredients
- 250g raw hazelnuts (skins on)
- 30g cocoa powder
- 75g icing sugar
- 2 tablespoons vegetable oil (sunflower, canola or grapeseed)
- ½ teaspoon vanilla extract
- pinch of salt flakes
Instructions
- Preheat the oven to 180°C fan forced. Spread the hazelnuts onto a baking tray and roast in the oven for 8 minutes, turning halfway through.
- Transfer the hazelnuts to a container with a lid, then shake vigorously to remove the skins. You could also use a tea towel to rub the skins off. However, I find this method very messy.
- Carefully remove the skinned hazelnuts from the container (a few skins left on are okay), then transfer them to the Thermomix bowl. Blend for 15 sec/speed 9 until the nuts resemble crumbs. Scrape down the sides of the bowl with a spatula.
- Blend for 3 mins/speed 4. Scrape down the bowl, then blend again for 2 mins/speed 4 until it resembles a runny consistency. Scrape down the sides of the bowl with a spatula.
- Add the cocoa powder, icing sugar, vanilla extract, vegetable oil and a pinch of salt and blend for 2 mins/speed 4. Scrape down the bowl with a spatula and blend again for 2 mins/speed 4.

If you prefer your Nutella sweeter, add a little more icing sugar.
If you prefer it runnier, add a little more vegetable oil.
