This recipe works in the TM5 and TM6 only. Due to the quantity, it is not suitable for the TM31.

This is the best Minestrone! Don't be put off by the long list of ingredients; they are all worth it. It's wholesome enough to be a complete meal, and it tastes even better with some homemade Soft Bread Rolls, Focaccia or Sourdough.
This recipe has been tested in the TM5 & TM6. The bowl of the TM31 is smaller; therefore, the quantity of this recipe will be too much.
We love using our Thermomix to make soups, such as this Roast Tomato Soup, Pumpkin Soup, and Carrot and Coriander Soup.

Ingredients
Note: The full quantities are shown in the recipe card below.
- Onion - peeled and cut in half.
- Garlic clove - peeled.
- Olive oil - use extra virgin olive oil.
- Bacon - cooked in a frying pan until crispy, then cut into small pieces.
- Carrots - diced.
- Celery stalks - thinly sliced.
- Potato - peeled and cut into 2cm cubes.
- Zucchini - diced (no need to peel).
- Dried oregano - or fresh oregano.
- Chicken stock - use a good low-sodium brand such as Campbell from a carton. You could also use vegetable stock.
- Crushed tomatoes - I recommend the brand Muti as they are less watery than other tinned tomatoes.
- Tomato puree - any brand will do.
- Small pasta shells - or other small pasta such as macaroni or elbows.
- Cannellini beans - or borlotti beans or kidney beans.
Step-by-Step Instructions

- Saute the onions and garlic until soft.
- Add the vegetables, stock, tomatoes, tomato puree and oregano and cook for 10 minutes. Use the simmering basket or splatter guard to prevent splatters.
- Add the pasta and cook for 12 minutes.
- Add the beans and cooked bacon and cook for a minute until heated through.
Important!
It's vital not to exceed the MAX line in the Thermomix bowl. If you do, reduce the amount of stock liquid.
Variations
- Vegetarian option: Omit the bacon and use vegetable stock instead of chicken stock.
- Spicy option: Add a teaspoon or two of dried chilli flakes.
- Gluten-Free option: Use gluten-free pasta.

Thermomix Minestrone Soup | TM5 & TM6
A wholesome, hearty soup which makes a big batch and is perfect for freezing. This recipe will work in the Thermomix TM5 & TM6 but not the TM31, as the bowl is not big enough.
Ingredients
- 1 onion, peeled and cut in half
- 1 clove garlic, peeled
- 20g extra virgin olive oil
- 2 rashers bacon, cooked until crispy and cut into pieces
- 1 carrot, diced
- 2 celery stalks, thinly sliced
- 1 medium potato, peeled and cut into 2cm cubes
- 1 zucchini, diced
- ½ teaspoon dried oregano
- 750mls / 3 cups low sodium chicken or vegetable stock
- 400g tin crushed tomatoes, I recommend the Muti brand
- 3 tablespoons tomato puree
- 100g Small pasta shells or macaroni
- 400g tin cannellini beans
To Garnish
- Grated Parmesan
- Fresh parsley
Instructions
- Place the onion and garlic into the Thermomix bowl and chop for 3 sec/speed 7. Scrape down the sides of the mixing bowl with a spatula.
- Add the olive oil and sauté for 3 mins/100°C/speed 1 without the measuring cup.
- Add the carrots, celery, potato, zucchini, tinned tomatoes, tomato paste, vegetable stock, and oregano and cook for 10 min/100°C/reverse/speed 1. Place the simmering basket on the Thermomix lid to prevent splatter. It's vital not to exceed the MAX line in the Thermomix bowl. Reduce the amount of stock liquid if so.
- Add the pasta and cook for 12 mins/100°C/reverse/speed 1. Place the simmering basket on the Thermomix lid to prevent splatter.
- Add the cannellini beans and bacon and cook for 1 min/100°C/reverse/speed 1. (With the simmering basket on top).
- Season to taste, garnish with parsley/parmesan and serve warm.

Question: I assume I can use a stock cube instead of liquid stock? If so, I can add water to the mixture and it will end up with the same result?
