This Thermomix version of the classic long Island Iced tea cocktail is made with five different spirits, lemon, a splash of cola, and plenty of ice.

I love a good cocktail on a Friday night, and a long island iced tea is one of my absolute favourites, along with an espresso martini.
Recipe Ingredients

Despite the name, long island iced tea contains no tea. It is traditionally prepared with the following ingredients:-
- Tequila - white Tequila, also known as silver and blanco.
- Rum - white Rum, like Bacardi.
- Gin - Bombay Sapphire is one of my favourites.
- Vodka - such as Smirnoff.
- Triple Sec - can be replaced with Cointreau.
- Lemon Juice - freshly squeezed is the best. You can also use freshly squeezed lime juice.
- Coke - you can use diet or regular Coke. It is usually served with just a splash, although you can add as much or as little as you like, depending on how strong you like it!
Step-by-Step Directions

- Add all the spirits and lemon juice to the Thermomix bowl, then add approximately 100g of ice (a large handful).
- Mix for 30 seconds, reverse speed 4.
- Strain the cocktail into two iced glasses using the simmering basket as a strainer. Top up with Coke and enjoy!
This recipe serves two but can easily be doubled to serve four.

Thermomix Long Island Iced Tea
This is the best boozy cocktail, perfect for Friday night! This recipe serves 2, but it can easily be doubled to serve 4.
Ingredients
- 25 ml white rum, such as Bacardi
- 25 ml gin
- 25 ml vodka
- 25 ml tequila blanco
- 25 ml triple sec
- 50 g lemon juice
- 100 g ice
- Splash of Coke or diet Coke
Instructions
- Prepare 2 tall glasses with ice. Add all spirits, lemon juice and ice to the Thermomix bowl and mix for 15 sec/reverse/speed 4
- Using the simmering basket, strain the cocktail equally into the glasses. Top with a splash of coke and enjoy!
