- Unsalted butter - unsalted butter gives you complete control of the overall flavour of your recipe, as the salt content in different butter brands can vary greatly.
- Plain flour - use plain flour as self-raising flour contains baking powder which interacts with the other ingredients.
- Milk - use whole cream milk for best results.
- Cheese - use strong cheddar cheese for a robust flavour.
Step-by-Step Directions

- Grate the cheese in the Thermomix and transfer to a separate bowl.

- Melt the butter.

- Add the flour and mix until smooth.

- Add the milk and heat for 6 mins/90°C/speed 4. Add the cheese and mix for 10 sec/speed 5 until combined (it should melt into the sauce).

Storage
You can store the cheese sauce in an airtight container in the fridge for up to 5 days or freeze it for up to 3 months. If frozen, let it thaw in the fridge overnight, then heat it on the stove. It may appear watery but will come together once heated.

Thermomix Cheese Sauce
Ingredients
- 50 g unsalted butter, cut into cubes
- 50 g plain flour
- 500 g full cream milk
- 100 g cheddar cheese
Instructions
- Add the cheese to the Thermomix bowl and grate for 5 sec/speed 9. Tip into a bowl and set aside. There is no need to clean the Thermomix bowl.
- Add the butter to the Thermomix bowl and melt for 3 min/60℃/speed 2. Scrape down the sides of the bowl with a spatula.
- Add the flour and cook for 1 min/100℃/speed 1. Scrape down the sides of the bowl with a spatula and along the blades. Cook again for 1 min/100℃/speed 1.
- Add the milk and cook for 6 min/90℃/speed 4. Add the cheese and blend for 10 sec/speed 5.
- Serve immediately, or see notes below on storage.
