Get ready for summer with this deliciously refreshing Thermomix mojito. Its combination of sweetness, citrus and mint makes it the perfect warm-weather cocktail.

Nothing says summer like a classic mojito. One sip and you're instantly in holiday mode. This is one of my favourite cocktails, alongside a classic margarita, especially when I'm in the mood for a fresh hit of lime.
Recipe Ingredients

- Fresh mint leaves - for muddling and garnish.
- White rum - such as Bacardi or Havana Club.
- Lime juice - I like to use fresh lime juice.
- Sugar syrup - I like to use sugar syrup for a smooth and even texture. Some recipes call for brown or white granulated sugar, which you could also use.
- Soda water - just a splash, depending on taste.
Step-by-Step Directions

- Muddle the mint: Divide the mint leaves between two tall glasses and gently press with a muddler. If you don't have one, the end of a wooden spoon works well. Avoid pressing too hard, as this can make the mint bitter. Once muddled, add a little ice to each glass.

- Add the lime juice, sugar syrup and white rum to the Thermomix bowl. Add the ice and mix for 10 seconds on reverse speed 4. Insert the simmering basket into the Thermomix bowl and strain the mojito evenly between the glasses.
- Top with soda water, garnish each glass with a sprig of mint and enjoy.
Mojito Mocktail
To make a mojito mocktail, proceed with the recipe, but skip the rum.

Thermomix Mojito
A sip of this classic cocktail will transport you to a sunny island resort. This recipe serves 2, but it can easily be doubled to serve 4.
Ingredients
- 8 fresh mint leaves, plus 2 mint sprigs for garnish
- 60 g fresh lime juice, approximately 2-3 limes
- 60 g sugar syrup, see notes
- 120 g white rum, such as Barcardi or Havana Club
- 75 g ice cubes, plus extra for the glasses
- Soda water
Instructions
- Muddle the mint: Divide the mint leaves between two tall glasses and gently press with a muddler. If you don't have one, the end of a wooden spoon works well. Avoid pressing too hard, as this can make the mint bitter. Add a little ice to each glass.
- Add the lime juice, sugar syrup, white rum and approximately 75g ice to the Thermomix bowl and mix for 10 sec/reverse/speed 4. Insert the simmering basket into the Thermomix bowl and strain the mojito evenly between the glasses.
- Top with soda water, garnish each glass with a sprig of mint and enjoy.
Notes
Sugar syrup: Sugar syrup is made by stirring together equal parts sugar and boiling water until dissolved. See my recipe for making your own sugar syrup in the Thermomix.
If you don't have any on hand, you can simply add 1-2 teaspoons of white or brown sugar to the glass.
