Ingredients
Note: The full quantities are shown in the recipe card below.
- Oats - use rolled oats or jumbo oats. Do not use quick-cook oats.
- Sultanas - or raisins or other dried fruit.
- Pumpkin seeds - also known as pepitas.
- Sunflower seeds -
- Coconut oil - gives the granola a lovely 'crunch'.
- Maple syrup - for sweetness.
- Vanilla extract -
- Cinnamon - adds a hint of spice.
Step by Step Directions

- Melt the coconut oil in the Thermomix, add the maple syrup and cinnamon, and mix until combined.
- Add the oats, pumpkin and sunflower seeds and mix until combined. Stir in any errant seeds with a spatula.
- Spread the mixture evenly over a large lined baking tray and bake on low heat for 30 minutes, stirring the mixture halfway through.
- Once the granola is out of the oven, add the sultanas and mix well. Leave it on the tray to cool completely before transferring it to a storage container.
Storage
Store the granola in an airtight container in the pantry for up to four weeks.

Simple Thermomix Granola
Simple and easy to make, this Thermomix Granola can be served with just milk or jazz it up with yogurt and berries for the ultimate breakfast.
Ingredients
- 70g coconut oil
- 100g maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 350g rolled oats
- 100g pumpkin seeds
- 100g sunflower seeds
- 150g sultanas (or other dried fruit), if they're stuck together, pick them apart with your fingers
Instructions
- Preheat the oven to 150°C fan/170°C and line a large baking tray with baking paper.
- Melt the coconut oil in the Thermomix bowl for 2½ min/50°C/speed 1. Add the maple syrup, vanilla extract, and cinnamon and mix for 3 sec/speed 5.
- Add the oats, pumpkin and sunflower seeds, and mix for 20 sec/reverse/speed 3 to combine all the ingredients.
- Spread the mixture evenly onto the baking tray and bake for 30 minutes, stirring halfway through.
- When the granola is out of the oven, add the sultanas and mix well. Then, leave it on the baking tray to cool completely.
- Once cooled, the granola can be stored in an airtight container in the pantry for up to four weeks.

I use butter instead of coconut oil, and instead of the seeds I add 60g of cashews, 60g of macadamias and 70g of peanuts when the maple syrup and spices are added. This chops them up and it’s ready to add the oats and I use dried chopped mixed fruit 🙂

Can I use olive oil or grape seed oil?

Grape seed oil has a very mild flavour so should be ok to use in the granola without affecting the taste.
I probably wouldn't use olive oil as it's quite strong and the flavour could come through in the granola.
